Every couple has a dish — the ramen from a first date, the peach pie from a grandmother's kitchen. Our job is to find it, refine it, and serve it to two hundred people without losing its soul.
It starts with questions, not tastings
Before anyone lifts a fork, Chef Marco sits down with you for what we call the story session. Where did you travel together? What did your families cook? What could you eat every week and never tire of? The answers become a shortlist of flavors, and only then do we cook.
One plate, three revisions
Signature dishes go through two private tastings. The first is deliberately rough — three directions on one table so you can react honestly. The second is the polished plate, portioned, sauced and timed exactly as your guests will receive it. Most couples change one thing; some change everything. Both are fine.
Scale without compromise
A dish that sings for two can fall flat for two hundred. Our kitchen tests every signature plate at full banquet volume — holding times, pass lighting, sauce temperature — so the 200th plate looks like the first. That testing is included in every wedding booking, and it's why guests photograph our food before they eat it.
Bring us your craving
The strangest request we've honored? A midnight grilled-cheese bar for a black-tie wedding — served with tiny tomato soup shooters at 11pm sharp. The dance floor emptied in seconds, and nobody has forgotten it since.
